Sausage and Orzo Soup

This was an easy soup that was light and delicious. My kids loved the meatballs and they were literally the easiest meatballs ever.

Philly Cheesesteak French Dip Sandwiches

I love a crock pot meal during the week! This is one of our very favorites.

Breakfast Burritos

We’ve been needing to do quick and easy dinners during the week because of sports at night. This one took me 20 minutes to put together and everyone loves breakfast burritos!

Pear Pie

We’re celebrating the first day of fall this weekend with our annual Fall Fest, and I had to make a fall pie! We bought pears at the store this week so this seemed like the perfect way to use them. I’ve made this recipe a few times before and it’s incredible.

Green Chile

I’ve made this recipe a bunch of times now and it is so freaking delicious. We always serve it with fresh cheese and homemade tortillas.

Caramel Crush Bars

These look amazing -cannot wait to make them for Sunday dessert!

Italian Wedding Soup

I’ve made this soup a few times and we all enjoy it. It’s clean, full of veggies, and easy to make without much time commitment.

Sausage, Peppers and Spinach Pasta

Every time I make a dish like this with mushrooms or something my kids might not eat, I keep the noodles and the sauce separate. Also, I blended the sauce up so it didn’t have chunks of pepper or tomato, and that made it much more kid-friendly!

Chicken Primavera 

This is another really healthy and easy dinner – just throw it in the crockpot and it’s ready at dinner time!

Shredded Beef Enchiladas 

I make these enchiladas probably every other month for Sunday dinner – they’re one of our favorites and although they’re a little labor-intensive, they are fantastic and make even better leftovers. Sometimes we make them with a pork roast, but this week I’m making them with a beef roast.

Caramel Crush Bars

I ended up making the vanilla pear pie for Sunday dessert last week instead of the caramel crush bars, so we’re making them this week. My oldest has an arch expander and he’s not allowed to eat caramel, so he’s going to have to sit this one out, but the rest of us are really excited about trying these!
