Time for this week’s dinner ideas! I wanted to ease back into weekly meals after a long Christmas break of a lot of eating out, leftovers, and rich foods. It felt good to be back into a routine!

Tortellini Soup
It’s officially soup season with the chilly Dallas weather. I’ve made this soup dozens of times and it’s one of our all-time favorites. It’s hearty without being heavy, and even the kids love it.
Chicken Roll-Ups
These are one of my kids’ favorite dinners. They’re easy to make and I always make a ton so we have leftovers for the weekend or for lunches. I do some with breadcrumbs and some with just a sprinkle of paprika on top. This time I didn’t serve them with mashed potatoes (like I usually do…) I made them with crispy potatoes and brown gravy. Delish!
Steak Tacos
I didn’t actually follow a recipe for this dinner. I just used a few of my ButcherBox ribeye steaks and cooked them on my grill pan, then sliced them up and served them on homemade tortillas with salsa, fresh cheese, and avocado. So good and so easy. I planned to serve this with crispy cauliflower, but it was a busy night of activities for the kids so I ran out of time and just served with chips and salsa and grapes.
Hamburgers and Crispy Cauliflower
This was another super easy weeknight dinner. I grilled the hamburgers on my grill pan, and then made crispy cauliflower by tossing it in salt, olive oil, and a little bit of garlic powder, and cooking them at 425F for about 35 minutes.
BBQ Chicken Pizzas
It’s our favorite pizza night! We have this BBQ chicken pizza pretty much every weekend. I use this pizza dough and it’s super quick and delicious. I put grilled chicken, BBQ sauce, Mexican cheese, jalapeños, and corn on our pizza and then we top with crispy onions when it’s served. Super yummy.
