This week we made a bunch of simple, delicious meals that used up leftovers and were a hit for the whole family.
Here’s a quick review of our weekly dinners:
Monday: Paninis
I’ve started doing sandwiches or breakfast on Mondays and it makes a crazy first day back to work and school feel a little more manageable. We don’t have a panini maker, but we just popped our sandwiches in the waffle iron and that worked perfectly!
Tuesday: Loaded Nachos and Roasted Asparagus
My 7 year old requested nachos this week, and in an effort to make them a little more robust for a full meal, we did loaded nachos, plus a side of roasted asparagus. We did a “build your own” and just put all the ingredients on the counter so everyone could put what they wanted on their plates, then we each microwaved them individually. Super easy and quick weeknight meal! It was especially easy because I used leftover ground beef from tacos last week, so it was great for using up leftovers!
Wednesday: Tortellini Sausage Soup and Corn Muffins and Caesar Salad
This is one of my all time favorite soups. It’s easy, flavorful, and hearty without feeling heavy. I served with leftover corn muffins from dinner last week, and a caesar salad.
Thursday: Homemade Mac & Cheese and Brussel Sprouts
Thursday is our pasta night, and the boys requested baked Mac and cheese. I made this yummy recipe and made it ahead of time so I could easily pop it in the oven for dinner. I served with roasted Brussels sprouts.
Friday: BBQ Pizza with Canadian Bacon with Caesar Salad
We had some leftover Canadian Bacon from a recent meal, so I was planning to do Hawaiian pizza, but everyone requested we do our normal BBQ chicken pizza and add Canadian bacon. Delish! I always use Mel’s kitchen cafe’s pizza dough and it’s easy and so good. For our pizza, I do BBQ sauce, fiesta blend cheese, grilled chicken, frozen corn, fresh jalapeños, and then top with crispy onions after it’s cooked. I served with a caesar salad.
Saturday: Out to Eat- Family Date Night
Sunday: Cafe Rio Burritos
This is one of my all time favorite recipes. It takes 24 hours to cook, but it’s worth the effort and is so delicious. Since none of my family is a huge fan of the cafe rio salads, we just do burritos and they’re fantastic. I serve with beans, cilantro lime rice, and cheese.
i really enjoy your content so thank you. i would love to see a post comparing budget jeans. i love my walmart time and tru jeans and i know my sister has some from target that she loves. maybe you’ve done something like this before and i’ve just missed it?
