We had a lot of leftovers from family in town last week, so our weekly menu is a little shorter this week. But we made a few delicious dinners!

This week we have our favorite New Orlean’s red beans and rice recipe, a Minestrone soup that uses up a bunch of veggies in the fridge, and more. Check them out below!

Fry Bread

My kids LOVE this recipe. It’s basically a deep fried scone with taco toppings, like ground beef, cheese, tomatoes, lettuce, etc. It’s fun to do a build your own so every person gets what they’d like!

Minestrone Soup

It’s less rainy this week, but I always love soup in the winter. This one is an Olive Garden copycat and was yummy!

This also uses up lots of veggies if you have some veggies in your fridge needing to be used.

Sausage and Red Beans over Rice

This red beans and rice recipe is so simple and one of our favorites for Sunday dinner.

My only suggestion is to wait until 1 hour before serving to add to the sausage to the crockpot, or else it gets a little bit mushy.

BBQ Chicken Pizza with Corn

This pizza has become a staple in our house! It’s easy and hearty and delicious. We always top ours with crispy onions, cause it makes it extra delicious!

Cake Mix Chocolate Cookies with M&Ms

This is one of the easiest cookie recipes ever. It’s just a cake mix and a few other simple ingredients. The recipe calls for regular M&Ms, but we also do peanut butter M&Ms cause…duh.
