This week our weekly menu has a few new recipes! A delicious sausage and rice skillet, a delicious udon noodle soup, and our favorite homemade pizza recipe.

Our weekly menu will give you some good dinner ideas!

This week we started in-person school, so our week has been extra busy. But these dinners on our weekly menu were quick and easy and delicious.

Sausage, Pepper and Rice Skillet

I love a one skillet meal, and this one was super easy. Actually I did cook my rice in our rice cooker, so I guess that’s not exactly one pan, but it was super simple and took less than 30 minutes to make.

I served it with fresh blueberries and an italian loaf of bread.

Spaghetti Bolognese

I made a different spaghetti bolognese recipe a few months ago, but we found this recipe and gave it a try. It was so much better. So flavorful and so delicious.

I love that it’s pretty standard spaghetti, but lots of veggies packed in there.

My kids all gobbled it up!

Carnitas Tacos

We’re having these carnitas tacos for Sunday dinner tonight – we love tacos, and this is sure to be a winner.

I’m serving with fresh guacamole and tortilla chips!

Slow Cooker Beef and Udon Noodle Soup

We made this recipe once before, and it was so good so we had to make it again. It’s super simple to just toss the first few ingredients in the crockpot and let it cook all day. You throw in a few other ingredients at the end.

I leave out the cream of mushroom soup, cause…not a fan…so ours wasn’t creamy or thick. It was DELICIOUS.

Brown Butter Toffee Cookies

We’re making these for dessert tonight. We had them in our weekly menu last week, but when we got home from Galveston we didn’t end up making them. So this week is the week!

Cookies are my very favorite dessert, and I love trying new recipes. You can’t go wrong with brown butter AND toffee!

Mushroom Bacon Pizza

This is our favorite pizza recipe. I got it out of a cookbook that I own, so the recipe is not online. Here it is!

Place a pizza stone in your oven. Preheat the oven to 500 degrees F. Do not place the pizza stone in the hot oven or it will crack.

Make this pizza crust recipe.

Ingredients:

  • 2-3 TB Olive oil
  • Shredded cheddar cheese
  • Cooked bacon, crumbled
  • Sliced mushrooms

Instructions:

  1. Drizzle olive oil over the prepared pizza crust
  2. Scatter the cooked bacon and mushrooms over the pizza crust
  3. Sprinkle the cheddar cheese over the top.
  4. Cook the pizza on a pizza stone for 12-15 minutes or until crispy and bubbly on top.
