Time for this week’s dinner ideas! We have some family in town and it’s the last week of summer so we went big with the meals this week. A lot of summer flavors and favorite family meals.
Crepes
Crepes are a great and easy dinner cause you can make savory and sweet ones! Our favorites are cheese and turkey, and strawberries and Nutella. These crepes are super simple and quick to make. The recipe says to let the batter sit for 30 minutes, but I always forget and am in a rush, so I don’t and it still turns out great.
Chicken Penne Pasta
I was using up some leftover ingredients in the fridge and made this delicious pasta. I threw in some frozen peas for a little extra green, and the kids gobbled it up!
Bagel Breakfast Sandwich
Everyone loves a bagel sandwich, right? These ones were easy and delicious for a quick weekday dinner.
Homemade Pho
Pho is one of our favorite meals to get at a restaurant, but it’s harder to find here in the suburbs of Dallas than in Orange County, California where we used to live.
First of all, the broth was AMAZING. I made a couple of adjustments, like using ground ginger instead of ginger root, and using brown sugar instead of turbinado sugar.
I was gone all day Thursday, so I just cooked the beef roast in the crockpot all day with some beef bouillon and water until it was super tender. Then I used the accumulated liquid from the crockpot when the recipe said to add beef broth. I should have strained this, cause it was super fatty.
When the broth was ready, it was AMAZING. Then I added the shredded beef and it changed the flavor a bit. Still good, but it gave it more of a roast flavor instead of that unique and distinct pho broth flavor that it had before.
Next time I make it, I’ll save the crockpot meat for another dish the next day and thinly cut some raw steak or brisket and add that to the bowl when I serve it so it cooks in the broth.
I served it with jalapenos from our garden, lime wedges, cilantro, and mung bean sprouts.
Roasted Red Potatoes
My father-in-law is in town this week and it’s his birthday today! We’re grilling steaks and I’m making these yummy roasted red potatoes for a side dish.
Homemade Buns/Rolls
In addition to the steak and potatoes, I’m also doing grilled corn and these hamburger buns that actually make insanely good rolls. They take 40 minutes and they’re sweet, soft, and fool proof. If you need a good soft roll recipe, TRY THESE.
Cream Puffs
My father-in-law LOVES cream puffs, so I’m making these tonight for his birthday. Mel’s Kitchen Cafe never lets me down with her recipes, so we’re giving them a try!
